To be honest: “Underneath The Coconut Tree” would have been more suitable. Surrounded by 273 coconut trees, Sri Lanka’s most southern Beach and Spa Hotel in Tangalle features 22 unique rooms and villas. The Room types are Ocean House, Temple House, Garden House & Grand Villa. Despite the abundance of marvelous palm trees we fell in love with something else: “lonely” mango trees with their sweet fruits, scattered around UTMT’s area.
Good food needs regional and seasonal products. These are the pillars of their cuisine. Not more, nor less. They travel a lot throughout the country, try and taste, visit local farmers and question neighbors. They pick and choose the best Sri Lanka has to offer. Be it Nalin’s fish, Ravi’s papaya, Roshan’s buffalo milk or Dinesh’s vegetables – they need to know their suppliers personally. Besides the focus on Sri Lanka’s overwhelming world of spices they will also let their European and Austrian backgrounds influence their cooking. Right now they are making their own brezels, baking their own bread and Austrian pastries and produce their own jam with a selection of Sri Lankan fruits. Even though the latter might be due to their occasional homesickness. Be sure that they will find the appropriate choice to overwhelm your palate: nature’s best fruits from their own UTMT fruit stand, your Singhalese inspired egg-dish in the morning or for example the classic chicken curry for dinner on their picturesque terrace.
